Jesús Sánchez is one of the leading figures in contemporary Spanish cuisine. Chef of the acclaimed Cenador de Amós, with three Michelin Stars and one Green Star, he has masterfully combined Cantabrian culinary heritage with a deeply innovative and environmentally friendly vision. Together with his wife, Marián Martínez, he began this project more than three decades ago, transforming it into a temple of gastronomy located in an 18th-century mansion.
From his kitchen, Jesús rescues recipes from the north, reinterprets tradition with artistic sensitivity, and is committed to true sustainability, achieving Net Zero status in 2021. His approach combines local produce, a circular economy, renewable energy, and social commitment.
His cuisine not only excites with its flavor, but also with its ability to tell stories and awaken memories. A perfect balance between roots, technique, and avant-garde design has placed Cenador de Amós among the best in the world. In 2024, he was recognized at The Best Chef Awards for his exemplary career.
