ANTONIO DÍAZ
Provincial Deputy for European Funds, Development, Industry and Employment, Granada Provincial Council

We are delighted to welcome you to the 1st Sabor Granada International Congress, an initiative born with the firm commitment to projecting the gastronomic potential of our province and making Granada a true benchmark in the national and international culinary scene.
From the Granada Provincial Council, and within the framework of the Sabor Granada Brand Strategy 2025–2028, we promote this congress as a key tool to revitalize our agri-food ecosystem, strengthen alliances between producers, restaurateurs, distributors, and retailers, and foster the professionalization of the sector through training, knowledge exchange, and the recognition of local talent.
Granada is much more than a territory; it is diversity, identity, landscape, and flavor. With "ENCLAVE" as its central concept, this congress highlights this uniqueness, connecting products, cuisine, dining, innovation, and sustainability.
All of this with a strategic vision that focuses on quality as a hallmark, collaboration as a method, and the economic development of our land as our goal. This event is not an end in itself, but rather the starting point of a new era for the Sabor Granada brand: more cohesive, more recognized, and more international. A space for meeting, reflection, and celebration of the work well done by hundreds of professionals (hundreds of farmers, ranchers, bakers, winemakers, cheesemakers, canners, pastry chefs, and agri-food artisans, who, along with chefs, waiters, sommeliers, dining room managers, baristas, pastry chefs, trainers, distributors, and entrepreneurs in the HORECA sector), shape our agri-food and gastronomic identity day after day.
Thank you for being part of this event, which will undoubtedly mark a turning point in the gastronomic projection of our province.
Welcome to the Congress. Welcome to ENCLAVE.
Welcome to Sabor Granada.
