From Salamanca, chef Víctor Gutiérrez presents one of the most unique culinary offerings on the national scene. Born in Peru and trained in Europe, he is a pioneer in fusing Peruvian cuisine with Castilian flavors and products, creating a unique culinary identity. His restaurant, the only Peruvian restaurant in Spain with a Michelin star, is a laboratory of gastronomic fusion where ceviche and ham, chili peppers and suckling lamb coexist.
Passionate about local produce and contemporary techniques, Gutiérrez offers tasting menus that are authentic sensory narratives—"Criollo," "Mestizo," "Raíces"—that explore his dual cultural heritage. Furthermore, he has democratized his cuisine with “Sudaka”, a Peruvian takeaway line with an urban spirit and authentic flavor.
