Pedro Aguilera: Avant-garde with roots in the Sierra de Cádiz
Pedro Aguilera represents one of the most distinctive and personal voices in the new Andalusian cuisine. Trained at La Cónsula in Málaga and with experience alongside figures like Ricard Camarena, he honed his talent in the kitchens of haute cuisine before returning to Alcalá del Valle in 2020. There, he decided to revitalize Mesón Sabor Andaluz, the family restaurant founded by his parents, transforming it into a contemporary establishment that honors its heritage.
His cuisine, deeply connected to the land, focuses on organic and locally sourced products—especially vegetables from the Sierra de Cádiz—to which he applies a technical, emotional, and refined approach. Thanks to this proposal, he has been awarded the region's first Michelin star and the Revelation Chef award at Madrid Fusion 2022.
