Hugo Souchet: Between legacy and creation, the essence of Eugénie
A direct disciple of the legendary Michel Guérard (who died in August 2024), Hugo Souchet leads the culinary offering of Les Présd’Eugénie, one of the most emblematic gastronomic and hotel destinations in France and the world, recognized with the prestigious “Palace de France” distinction.
Before finding his home and purpose at Eugénie, he trained alongside gastronomic giants such as Alain Ducasse, Pierre Gagnaire, Yannick Alléno, Daniel Boulud, among others, and had international experiences in New York, Monaco and Japan, where he delved into Kaiseki cuisine.
This cosmopolitan background, combined with his youth and creative energy, allowed him to forge a unique vision that he now places at the service of this institution.
Since 2017, he has been in charge of the kitchens of the Restaurant Michel Guérard with three Michelin stars, held uninterruptedly since 1977, where he has renewed the gastronomic concept together with his master and has promoted new experiences such as the Restaurant L’Orangerie, in the same complex, distinguished with a Michelin star since this year.
Its poetic and rigorous cuisine combines emotion, precision, and respect for tradition, enhancing local produce and elevating every dining experience to an exceptional level.
Les Présd’Eugénie is much more than a restaurant: with 45 rooms and suites, five restaurants, and a Sisley® Spa called La FermeThermale®, surrounded by seven gardens, it offers a holistic experience where haute cuisine, well-being, and French hospitality come together in perfect harmony.
