They were barely twenty when they decided to give an unexpected twist to their family bar in their village, Huerta del Marquesado. From this corner of the Serranía de Cuenca mountains, Álex Paz and Olga García have won over critics with a youthful, free-spirited approach deeply connected to their surroundings. Their restaurant, Fuentelgato, with only 12 seats, has been awarded a Repsol Sun and recognized by the Opinionated About Dining platform as one of the 10 best new restaurants in Europe.
They have channeled their rural environment and heritage into a cuisine that looks to the present and future from a local perspective. Each dish is a tribute to their land, to small producers, and to the extreme seasonality of the mountain range.
